What is a Kamado?

Kamado Grill

 I like the looks of a kamado grill, I’ve heard a lot about a kamado, but what exactly is a kamado?  A kamado is a traditional Japanese wood or charcoal fired earthen vessel used as a grill, oven or stove.   Modern versions of this earthen vessel are being made out of ceramic which decreases the cracking associated with the clay vessel.  The traditional kamado grills us the mass of their dense shaped bodies to reduce heat loss.  This result give theses charcoal grills excellent insulation, and high efficiency, with the ability to hold very high and low temperatures. 

Kamados are an extremely versatile outdoor cooking appliance.  Kamado's can cook at extremely low temperatures for smoking to extremely high temperatures for baking pizza on a pizza stone.  Due to the excellent heat retainment, they can smoke a brisket, bake bread, roast a turkey without the loss of moisture.

Outer surfaces of kamados have a variety of materials available. Most of the outer surface variations depend on the brand you purchase.  This surface coating does not affect the performance of your grill.
In addition to the outer ceramic shell, lump charcoal is held in a stainless steel or ceramic bowl inside the unit.  The lower side of the unit has a draft opening to provide air to the charcoal, and a top vent in the dome lid for air to exit the cooker.  Temperature is controlled by adjusting these two vents.  A thermometer for monitoring the cooking temperature of the cooker is in the lid of most Kamado cookers.
Suspended over the fire are cooking grids to provide the cooking surfaces for the food.
